Simplest Tea Loaf

With kids at home and supplies running low, I thought it might be useful to share another simple recipe you can make with a few ingredients you might already have lying around at home! The simplest tea loaf I know. Leave some fruit soaking overnight, then 5 minutes the next morning and you can have tea loaf ready within the hour!


Ingredients - Makes 1 loaf

  • 225g mixed dried fruit ( I used 50/50 currants and raisins)

  • 100g Demerara sugar (or any sugar really, brown varieties better flavour wise)

  • 150ml hot tea of your choice

  • 1 large egg (XL in US/Canada)

  • 1 heaped tablespoon marmalade (optional!)

  • 225g self-raising flour


Method

  1. Add your fruit, sugar and hot tea to a large bowl and cover with cling film overnight or for 12 hours for the fruit to get nice and plump

  2. Preheat your oven to Fan 160 C (180C conventional) and lightly grease a 1lb loaf tin with butter or oil. Add the egg and marmalade to the fruit and mix well, then sieve in the flour and mix until well combined

  3. Pour into the loaf tin, level the top and bake on the middle shelf for 50 minutes or until golden brown and a skewer in the centre comes out clean. Leave to cool on a wire rack, best served with butter and a cup of tea
